Here is how I cook ribs in the Bradley Smoker:

  1. Set the smoker for high heat; aim for 200-225
  2. Remove membrane from the back side
  3. Cover both sides with Penzey’s BBQ 3000
  4. Put ribs in the smoker, and turn on the smoke generator.
  5. Maintain the smoke generator for 1 1/2 hours, checking temperature occasionally
  6. Mix one part oil and one part apple juice in a spray bottle
  7. Spray ribs every 30 to 45 minutes until done
  8. They’re done somewhere between five and six hours from when they first went in to the smoker
