Here is how I cook ribs in the Bradley Smoker:
- Set the smoker for high heat; aim for 200-225
- Remove membrane from the back side
- Cover both sides with Penzey’s BBQ 3000
- Put ribs in the smoker, and turn on the smoke generator.
- Maintain the smoke generator for 1 1/2 hours, checking temperature occasionally
- Mix one part oil and one part apple juice in a spray bottle
- Spray ribs every 30 to 45 minutes until done
- They’re done somewhere between five and six hours from when they first went in to the smoker
